Parmesan Truffle Fries

My husband will say that New Orleans Cafe at Disneyland (see A taste of Mardi Gras at Disneyland) in Anaheim is one of his favorite places to eat.  If New Orleans Cafe was a stand alone restaurant, we’d probably be there at least once a month.  However, unfortunately for my husband, you can only dine at the restaurant when you visit Disneyland, and since we’re not Disneyland season pass holders, that means we can’t just go and eat there when we feel like it.  And, I’m definitely not paying for a ticket to Disneyland just to eat at the New Orleans Cafe.  So, what do you do when you want New Orleans Cafe food and you can’t just pop into the restaurant to have it?  If you’re my husband, you decide you want to re-create some of those flavors at home!

The last time we were at New Orleans Cafe, we ordered a starter of Pommes Frittes.  These were basically fancy french fries dressed up with garlic, parmesan cheese and parsley.  Well my husband thought he could create something really similar at home, but dress it up a bit and give it some pizzazz, so he came up with Parmesan Truffle fries.

Admittedly, we cheated a little bit.  We didn’t home make our own french fries.  While it would have been fun to cut up the potatoes and make our own french fries, it’s a bit time-consuming for a dish that will just be served as a side.  So, we bought a bag of frozen french fries that we will deep-fry in our own deep fryer.  Using frozen french fries does save a lot of time and effort, and some times, it’s all about getting food on the table as quickly as possible.

The only other ingredients we need for this dish is parsley (fresh is probably better, but dried works as well), shaved parmesan cheese, and white truffle oil.  It’s the white truffle oil that provides this dish with pizzazz!

Take the frozen french fries and deep fry them until they are golden and crispy on the outside and hot and soft on the inside.  This will take a few minutes.  As the fries are frying, stir them around in the fryer once or twice during the process so that every fry cooks up evenly.

When the fries have been fried, take them out of the deep-fryer and dump them into a paper towel lined bowl.  Use the paper towels to soak up any excess oil from the deep fryer.  When you are ready to dress up the fries for their debut, take the paper towels out of the bowl, but leave the fries behind.  You’ll use this bowl to season the fries.

Into the bowl with the golden fried french fries, add in some parsley.  The parsley gives the fries a little bit of flavor and some nice color as well.  Once you’ve added the parsley, shake up the fries in the bowl so that the parsley is evenly distributed throughout.

Next is the parmesan cheese.  Take the cheese and sprinkle it all over the hot fries.  The heat and residual oil from the fries will allow the parmesan to “stick” to it.  Toss in the cheese, and shake up the bowl to distribute the cheese, just as you did with the parsley.  Since the parmesan cheese is salty, you don’t need to add any additional salt to the fries.

Finally, here’s where the luxury in the dish comes from.  You want to add a few drops of white truffle oil right into the bowl of fries.  The white truffle oil is pungent, flavorful and decadent.  A little bit goes a very, very long way.  Add in a few drops.  Shake up the bowl.  Add in a couple more drops and shake up the bowl again.  Make sure that the parsley, parmesan and truffle oil coat all of the fries.  Transfer the fries into your serving bowl, and serve the parmesan truffle fries hot!

These are french fries kicked up to the extreme.  You get crunch from the fries, heavenly flavor from the white truffle oil and saltiness from the parmesan cheese.  It’s the perfect side dish for a simple meal.  And by using frozen french fries to begin with, this dish can go from deep fryer to dining table in just about 10-12 minutes.  What a way to add some kick to regular french fries!
