Quick Fix Nachos

Ever have one of those days where you just can’t figure out what to make for dinner?

For me and my husband, that day is just about every day!  It’s awful.  You work a long day at work, you come home tired, and one of the last things you want to do is slave over the stove and come up with something gourmet to cook.

Last night, as my husband and I were agonizing over what to have for dinner, I decided to throw together what we’ll call a quickie appetizer: quick fix nachos.

Now, there’s really no secret to these nachos, and virtually no work to put into making it at all.  It really took all of 5 minutes tops!

Basically, I took a block of extra sharp cheese that we have in the fridge, shredded a bunch of it up; took out a plate, dumped a bunch of Tostitos scoops tortilla chips on top (but you could substitute for any shape, or brand of tortilla chips you like); sprinkled the shredded cheese over the nachos, and threw the whole plate into the microwave for about 45 seconds.  When time was up, I pulled out the plate and the place instantly smelled warm and fragrant.  Cheese always makes everything better!  The cheese had melted onto the tortilla chips and was all ooey and gooey.  I took some Pace Picante mild salsa out of the fridge and just drizzled it over the tortilla chips with their melted salsa.  Yum!  A great, and easy little appetizer for dinner.

Of course, in the past, we’ve also turned this simple nacho dish into a whole dinner meal.  Basically, you can dress up the nachos by adding a bunch of condiments.  We’ve used grilled chicken, or grilled steak (as pictured), and put it on top of the tortilla chips, cut up some tomatoes, green onions, and drizzle some queso on top of it!  It makes a nice hearty meal.  Of course, you can go even further and throw on whatever toppings you like: black olives, shredded lettuce, shredded cheese, diced onions, sour cream, salsa, green chiles, whatever your heart desires.

It’s really a quick and easy meal to throw together when you have no idea what else to make!
